SARDINE AND TOMATO TOSTA
With all the unavoidable complexity in the world these days, there's something to be said for simplicity. This recipe, inspired by the essential flavors of Spanish food, revels in simplicity without forgoing flavor or sacrificing salubrity. Perfect for lunchtime, sardines and tomatoes on gluten-free toast provide an outsize helping of omega-3 fatty acids in an easy-to-enjoy format that will have you looking forward to lunch and loving your afternoons. If only everything were this simple!
1 medium red, flavorful tomato
(ideally heirloom or organic),
sliced
Extra virgin olive oil
2 to 3 slices gluten-free bread,
toasted to liking
Salt
Ground black pepper
Smoked paprika
1 tin sardines in olive oil, about 3.5
oz., drained
1 Heat a small, non-stick skillet over medium heat. Add tomato slices and heat until warm, about 2 minutes per side.
2 Drizzle olive oil over toast, top with tomato slices and season to taste with salt, pepper, and paprika. Top with sardines and serve immediately.
